Wurstsalat, meaning “sausage salad” in German, is a salad-type dish that consists of sausage in a tart sauce made of vinegar, oil, and onions. The recipe, which originated in Germany, also is popular in Switzerland and Austria. Immigrants introduced the dish to America where today there are many variations; however, traditionally it is made with German pickles, German sausage, and served with German bread such as pumpernickel, like in this recipe.

Ingredients
- 1 lb cooked salami, cut into thin slices or julienned
- 2 large pickles (german preferred), diced
- 1 large onion, thinly sliced
- 3 Tbsp white wine vinegar
- 4 Tbsp sunflower oil
- Salt, to taste
- Ground black pepper, to taste
- 4 slices pumpernickel bread, for serving (optional)
Directions
- Toss together the salami, pickles, and onion in a large bowl.
- Combine the vinegar and oil in a small bowl, and then season with salt and pepper.
- Pour the oil and vinegar mixture over the salad and mix gently.
- Chill the salad in the refrigerator for 30 minutes.
- Serve with pumpernickel bread on the side, if using.
