Buckeyes are a classic treat especially popular in Ohio. Balls of peanut butter fudge are dipped in chocolate, leaving just an eye of peanut butter exposed. The confection resembles the nuts of the Ohio buckeye tree, which is the state tree of Ohio. The mascot of Ohio State University is also the buckeye nut.

Ingredients
- 1 cup powdered sugar
- ½ cup peanut butter, creamy
- 2 Tbsp unsalted butter, melted
- ½ tsp vanilla
- ¼ tsp sea salt
- 1 cup semisweet chocolate chips
Directions
- Line a large baking tray with waxed paper.
- In a mixing bowl, combine sugar, peanut butter, melted butter, vanilla, and sea salt; mix well into a smooth consistency.
- Shape 16 balls, flatten them slightly, and place on tray.
- Cover well and freeze 30 minutes to allow them to firm up.
- Melt chocolate chips over low heat or microwave for 2 minutes.
- Skewer a ball (with a long toothpick or metal skewer), dip into chocolate exposing part of the ball of the “eye,” and return to a tray. Repeat until done.
- Smooth over skewer holes with a finger to create a smooth finish.
- Chill 30 minutes to firm up chocolate, and enjoy.
