Shrimp or prawn toast comes from Chinese cultural roots, a dish in the dim sum tradition, and is a popular appetizer in Chinese-American cuisine. The dish was introduced in the 19th century in Guangzhou in China's Guangdong province. Originally called hatosi, a blending of the Cantonese word ha, meaning shrimp, and the English word toast, the creation became popular along Chinese trade routes. In the United States, cheesy shrimp toast is enjoyed as an hors d'oeuvre, with variations to fit every taste. Try topping toasts with duck sauce, pepper jelly, or sesame seeds.

Ingredients
- 1 cup mayonnaise
- 1 cup chopped cooked shrimp meat
- 1 cup shredded cheddar cheese
- 1 cup Parmesan cheese
- 1 tsp garlic salt
- 8 slices brioche or baguette
Directions
- Preheat oven to 350°F and line a baking sheet with foil.
- Combine mayonnaise, shrimp, cheddar and Parmesan cheeses, and garlic salt in a large bowl.
- Spread mixture over one side of each slice of bread.
- Arrange bread slices in one layer on baking sheet.
- Bake until brown and bubbly, about 20 minutes.
