The invention of the tortilla chip is credited to Rebecca Webb Carranza who co-owned a tortilla factory in Los Angeles during the 1940s with her husband. The story goes that the couple’s automatic tortilla-making machine often produced misshapen or ripped tortillas that couldn’t be used. To avoid wasted product, they decided to try cutting up the less-than-perfect tortillas and frying them. The Carranzas gave the chips out to family and friends, and from there demand increased. The couple began packaging bags of what they called Tort Chips, and before long they were being sold all along the West Coast. It wasn’t long before someone tried melting cheese on top of the new chips, creating the popular snack we know today as chips and cheese.

Directions
- Place an oven rack in the middle position and preheat the oven to 450°F.
- Line a baking sheet with foil.
- Shred the cheese.
- Spread about half of the tortilla chips out on the baking sheet in an even layer.
- Sprinkle half of the shredded cheese over the chips.
- Repeat the last two steps using the remaining chips and cheese, creating a second layer.
- Bake for about 5 minutes or until the cheese is melted and bubbly.
- Remove the chips and cheese from the oven and serve immediately with your choice of any toppings.
