While working at Chicago’s Stop N’ Shop in the 1960s, Lorraine Lorusso experimented with dipping fresh strawberries in tempered chocolate. The chocolate would harden as it cooled. Lorusso began to sell her chocolate-covered strawberries, and they were a massive success. Today, chocolate-covered strawberries have become a Valentine’s Day staple. The combination of chocolate and red fruit is said to represent attraction and love. While dark chocolate is used in this recipe, it is also common to use milk chocolate or white chocolate.

Ingredients
- 20 medium-sized ripe strawberries, whole with stem
- 1 cup dark chocolate chips
Directions
- Gently wash and dry strawberries.
- Line a large tray with waxed paper.
- Simmer a few inches of water in a medium-size pot.
- Place chocolate in a glass or metal bowl and set it atop the pot with hot water.
- Stir constantly to melt chocolate. Do not let water come in contact with the chocolate.
- When chocolate has liquefied, hold one berry by the stem and dip into chocolate.
- Place on tray and repeat until all berries have been dipped.
- Refrigerate berries 20–30 minutes and serve.
