Alligator meat is described as firm textured with a mild, fishy flavor. It has historically been used as meat and still is, mainly in the Gulf Coast states. It appears in gumbo recipes dating to the mid-1800s. In the United States, alligator meat can only be sourced legally from alligator farms and is found in specialty stores or by mail order. It’s high in protein and low in fat. Alligator eggs also are consumed as food. Alligator hunting is legal in Arkansas, South Carolina, Louisiana, Texas, Florida, and Georgia.

Ingredients
- 1 lb alligator meat, cut into chunks
- Salt, to taste
- Freshly ground black pepper, to taste
- All-purpose flour, as needed for dredging
- 1 cup buttermilk
- 1 cup hot sauce
- Ranch dressing, as needed for dipping (optional)
Directions
- Heat a deep fryer to 350°F.
- Lightly season alligator meat with salt and pepper.
- Combine buttermilk and hot sauce.
- Dip alligator meat into buttermilk mixture, and then dip into flour.
- Place in deep fryer until golden-brown, about 2–3 minutes.
- Drain on paper towels.
- Serve with ranch dressing on the side, if using.
