Malt is a mixture of sugars produced from starch. The starch is converted to sugar by an enzyme called gibberellin, which is secreted by grain as it sprouts. The enzyme action ends when the malt is roasted; the roasting caramelizes some of the sugars and creates a tasty, toasted flavor. Once considered a health food, malted milk powder was invented in 1882 by William Horlick an Englishman who immigrated to the United States in the 1870s. Originally the powder was mixed with water to create a foamy malted milk drink, but it soon found its way into ice cream parlors and soda fountains, becoming more pleasure food than health food as it began being mixed with ice cream.

Ingredients
- 6 scoops vanilla ice cream
- 1¾ cups milk, very cold
- 3½ Tbsp malted milk powder
- ½ cup flavored syrup such as chocolate or strawberry (optional)
Directions
- Combine all the ingredients in a blender.
- Blend the ingredients just until thick and smooth, but don’t overmix.
- Pour the mixture equally into two tall glasses and serve them each with a straw.
