Popsicles

A happy accident led to the invention of the popsicle. Frank Epperson of California was 11 when he left a glass of powdered soda with a mixing stick in it out overnight. The liquid froze and inspired him to create an “epsicle,” which debuted in 1923. His kids referred to the frozen treat as “pop’s ‘sicle” and the name was changed. Today, Popsicles are made in Nevada, Maryland, and Missouri by Unilever and the term is now a generalized reference to frozen treats on sticks. Also called a freezer pop or ice pop, they can be made at home with ice cube trays and toothpicks, or with special molds.

Ingredients

  • 10 oz of frozen fruit (your choice)
  • 1 can (13 oz) full-fat coconut milk (or milk of your choice)
  • 2 Tbsp sweetener (honey or sugar)
  • 1 overripe banana (optional)

Directions

  1. Blend ingredients together in a blender until smooth.
  2. Pour the mixture into the popsicle molds and chill the molds in the freezer.
  3. Add the popsicle sticks to the molds after about 60 minutes of chilling and then return the molds to the freezer.
  4. Continue to chill in the freezer for about 3 hours or until completely frozen.
