Semifreddo, meaning “half cold” in Italian, is a frozen dairy dessert. Whipped with sugar and air, semifreddo maintains a soft texture even when frozen. A dessert popularized during the Italian Renaissance, semifreddo has appeared in the 2000s in Italian eateries in the United States. Semifreddo is easy to make by hand and does not require any specialized equipment. Various ingredients like coffee, chocolate, or fruit can be added as desired.

Ingredients
- 5 cups cream
- 2 cups sugar, divided
- 12 egg yolks
- 1 tsp almond or vanilla extract
- 1 cup toasted pistachios, roughly chopped
- Fresh berries, as needed for topping
- Chocolate sauce, as needed for topping
- Powdered sugar, as needed for garnish (optional)
- Mint sprigs, as needed for garnish (optional)
Directions
- Whisk the cream into medium peaks, then add 1 cup sugar and continue to whisk until stiff peaks form.
- In a large bowl, combine the egg yolks with the remaining cup of sugar.
- Continue to whisk until the yolks have become pale yellow in color and the mixture has tripled in volume.
- Add the whisked yolks to whipped cream.
- Add the almond or vanilla extract and fold the eggs into the cream.
- Add the pistachios.
- Freeze the finished semifreddo in a glass serving dish overnight.
- Serve in slices garnished as desired with fruit, sugar, chocolate, or mint.
