Smeerkaas is a popular Dutch cheese spread, typically made with melted Bergkaas cheese. Many smeerkaas flavors are available in the Netherlands including herbed and chopped ham. Sambal, a hot Indonesian sauce made from chili peppers, entered Dutch cuisine in the 1600 and 1700s through the country’s historical position atop the international spice trade. Smeerkaas can be difficult to find in the US, but this recipe is easy to prepare at home. If Bergkaas cheese is not available, unflavored and unsmoked Gouda is a good substitute. Serve the smeerkaas sambal with small pieces of bread or thin crackers.

- In a heat-proof dish or medium saucepan, warm the milk and butter.
- Grate the cheese and then add it to the dish or pan, stirring to combine.
- Heat in an oven, on stove-top, or in microwave until all the cheese is melted, stirring occasionally.
- Add the sambal, mixing to combine.
- Allow to cool before serving.
