Bredie

Bredie is a thick stew containing lamb, vegetables, and plenty of spices. In contrast to more European-style stews seasoned with bay leaves, thyme, and rosemary, this hearty Namibian dish includes Cape Malay spices such as cardamom, cumin, coriander, clove, and ginger. Bredie is a filling favorite in winter. In America, it is often served over rice or egg noodles.

  1. Combine the onion, water, salt, cumin, coriander, clove, ginger, and cardamom. When water has evaporated, add oil and sauté onion to a light gold.
  2. Add the garlic, chili pepper, and ground lamb to onions and sauté for 5 minutes.
  3. Add the green beans and potato. Bring to a gentle boil and simmer, covered, for 45 minutes. Cook until potatoes have softened, adding water as needed. 
  4. Serve bredie over hot rice or egg noodles, if using.
