This simple soup features rice and ground buffalo meat. Buffalo, also called bison, was once the most important food for many Great Plains Indian tribes. Using ground buffalo meat allows for several cuts to be combined, adding flavor and complexity. This recipe, adapted for modern times, can be made with any variety of rice as opposed to the native wild rice used by the Sioux.

Ingredients
- 5 cups water
- 1 tsp beef base
- 2 cups uncooked rice
- 3 lbs ground buffalo
Directions
- Bring water to a boil in large pot and add the beef base.
- Add the rice and cover the pot.
- Brown the buffalo meat in a skillet over medium high heat, adding water as needed.
- Drain the meat of moisture and add it to the pot of boiling rice.
- Continue to cook until the rice is fully done, about 15-20 minutes.
