In the United States chicken soup is most often made with the addition of noodles, thus the name chicken noodle soup. Traditionally, chicken soup was prepared using old hens too tough and stringy to be cooked any other way; however, in modern times young chickens are often used. The Campbell Soup Company released its "chicken soup with noodles" variety of condensed soup in 1934. As a deeply satisfying one-pot meal and possibly one of America's favorite comfort foods, chicken noodle soup is often used to treat symptoms of the common cold.

- Bring water and chicken to a boil. Reduce heat and simmer on medium low for 30 minutes.
- Remove chicken, cool. Remove meat from bones. Save meat in bowl with 2 tablespoons of broth to stay moist.
- Return bones to stock (not small bones).
- Add onion, carrot, celery, jalapeno, bay leaf, peppercorns, and salt. Bring to boil and simmer on medium low for 30 minutes.
- Taste, adjust seasonings, and return meat to soup. Simmer 15 minutes.
- Add noodles. Simmer for 4–5 minutes.
- Serve garnished with cilantro.
