Congee (Rice Porridge)

Congee is a rice porridge enjoyed by many people of Asian descent. It can be served plain or with additional ingredients such as meat, fish, tofu, bamboo shoots, or eggs. Congee can additionally be seasoned with soy sauce, ginger, or white pepper. This comfort food is often prepared as a meal for the ill or those who have difficulty chewing. The recipe was introduced to America by Asian immigrants.

Ingredients

  • 1 cup short grain rice
  • Water, as needed to soak rice plus 11 cups, divided
  • Salt, to taste
  • Dash of vegetable oil 

Directions

  1. Combine the rice, salt, and oil in a bowl and add enough water to just cover grains. Let rest overnight.
  2. Pour the rice mixture into a blender or food processor and purée. 
  3. Pour purée into a large pot with 10 cups of water. 
  4. Bring to a boil while stirring continuously.
  5. Boil and stir for 45 minutes, adding the remaining cup of water if necessary to achieve desired consistency.
