Made from pureed tomatoes and dairy, cream of tomato soup is a classic American dish. On its own, cream of tomato soup can be a light meal or an appetizer, often with garlic bread on the side for dipping.

- Place the butter and oil in a frying pan set over medium heat.
- Add the onion to the hot oil, and sauté for 2–3 minutes.
- Add tomatoes. Cook 10 minutes on low heat, stirring occasionally.
- Add tomato paste.
- Mix the flour with some stock in a small bowl to make a smooth, lump-free paste and then add it, along with the remaining stock, to the pot.
- Simmer 30 minutes, stirring occasionally.
- Remove from heat and purée mixture in a blender or food processor.
- Return puree to pot set over medium-low heat.
- Stir in the sugar, milk, cream, and salt, simmering until hot.
