Indian cuisine uses an amazing variety of dried beans, peas, and lentils, all called dal. A range of choices exist, with some favored in different regions of India, from red lentils and mung beans, to chickpeas and black lentils. Dal soup is India’s answer to popular American chicken soup. Indian immigrants to America brought dal with them, a nourishing meal enjoyed particularly when recovering from illness. A daily staple in India and many Indian American homes, dal soup is delicious with flatbreads such as chapati or naan.

Directions
- Place all ingredients in a large stockpot. Stir and bring to a boil over high heat.
 - Once boiling, lower heat to medium low and let soup simmer for 45 minutes. Stir often to avoid burning.
 - Cook until lentils and tomatoes are soft.
 - Salt to taste.
 - Garnish with coriander and serve.
