A tattie is a potato in the Scottish slang, and perhaps most associated with the dishes tattie scones and tattie and mince. In Welsh, this soup is called cawl cennin and is an important part of the cuisine of Wales, where the favorable growing conditions have caused leeks to become a national symbol. The Welsh immigrated to the United States in the mid-1600s, founding the Quaker city of Philadelphia and calling the area New Wales. The settlers brought their traditions and cuisines with them, and this soup has become a popular comfort food in the United States.

- Melt 2 tablespoons butter in a large soup pot. Add onion and leeks and cook until soft.
- Add potatoes and cook 2 minutes.
- Add stock and season with salt and pepper.
- Cover and let simmer 30 minutes.
- Add in remaining butter and serve.
