Indigenous to the Americas, maize, or corn, was one of the earliest domesticated food crops. It originates in Mexico 8,700 years ago and was domesticated from wild grass. Maize formed a food staple for indigenous tribes across the continent, often grown with beans and squash. Corn was one of the first foods shared with European colonists, who rapidly incorporated it into their own cuisines. This French-style maize soup was developed in the United States in the early 1870s.

Ingredients
- ½ onion, chopped
- 1 garlic clove, minced
- ¼ cup fresh parsley, chopped
- 1 Tbsp butter
- 3 Tbsp all-purpose flour
- 2½ cups milk
- 1 cup chicken broth
- 24 oz canned or fresh whole kernel corn
- 2½ Tbsp cream cheese
- 1 tsp garlic salt
- 1 tsp ground black pepper
- Ground cayenne pepper, to taste
Directions
- In a large pot, combine the onion, garlic, parsley, and butter, and cook over medium heat for about 5 minutes, until the onions are tender.
- Add the flour and stir well, about 2–3 minutes until thickened.
- Whisk in milk and broth.
- Add the corn and cream cheese and continue to cook until heated through.
- Season with garlic salt, black pepper, and cayenne pepper to taste.
- Serve hot.
