There are many variations of peanut soup, as it tends to be cooked with whatever ingredients are available. Some peanut soups may be exceedingly simple, using only fresh peanuts and chicken broth.

Ingredients
- 2–3 cups chicken stock
- 1 onion, minced
- 1 bell pepper, minced
- 2 garlic cloves, crushed
- 1 red chile pepper, minced
- 1 carrot, chopped
- 2 tomatoes, chopped
- 1 cup unsweetened peanut butter
- Salt, to taste
- Ground black pepper, to taste
Directions
- Combine all ingredients except for the peanut butter in a large saucepan or pot.
- Simmer over medium heat until carrots are tender.
- Add peanut butter and simmer 10 minutes.
- Add salt and pepper to taste.
- Serve hot.
