Pumpkin is a type of winter squash native to North America that was grown by Native Americans as a food source. The Indians gave pumpkins to the early settlers during their first winter in the New World and taught them the many uses for it. An early export to France, the pumpkin was cultivated there and by the 17th century various recipes for pumpkin dishes could be found in English cookbooks.

- Pour the oil into a large saucepan or pot set over medium-high heat.
- Add the onion and sauté for 5 minutes.
- Add the pumpkin and sauté for 3 minutes.
- Add the bay leaf, paprika, salt, pepper, and water. Bring to a boil.
- Cover the pot, reduce the heat, and simmer for 20 minutes, stirring occasionally.
- Remove the bay leaf, and then mash the pumpkin using a potato masher or fork.
- Serve hot.
