This Hawaiian version of ramen is considered by some to be Hawaii’s national dish. It’s a simply satisfying meal of noodles in broth. Saimin is seen as fast food in Hawaii and is even offered at Hawaiian McDonald’s. Various ingredients can be added to saimin, and toppings can include: Spam; ham or pork; carrots; green cabbage; bok choy; mushrooms; green peas; scrambled or fried egg; green onions, and cooked shrimp. Saimin’s origins may be Chinese or Japanese. The Hawaii’s mix of cultures, which include Filipino and Thai, render saimin’s origins unclear.

Ingredients
- 4 qts water
- 1 Tbsp salt
- 1 package (8 oz) dried Japanese soba noodles
- 4 cups chicken broth
- 1 Tbsp grated fresh ginger
- 2 Tbsp soy sauce
- Toppings, as desired
Directions
- Combine the water and salt in a large pot set over medium-high heat and bring to a boil.
- Add soba noodles and cook 4–6 minutes.
- Remove from heat, drain, and rinse under warm running water. Set aside.
- Place chicken broth and ginger in a large pot and bring to just a boil over medium-high heat.
- Reduce heat to low and add soy sauce and preferred toppings, simmering 5 minutes or until toppings cook. Remove from heat.
- Place cooked soba noodles in bowl on large serving spoon, top with broth mixture and toppings and serve.
