Spinach is believed to originate in modern day Iran and surrounding countries. Many cultures have recipes for spinach soup, which is rich in Vitamins A and K. In Norway, spinach is one of the few vegetables that grow easily in the far northern climate. Recipes for spinach soup vary and can include tomatoes, beef, and regional spices. Spinach soup can be served cold or with yogurt.

- In large pan heat olive oil over medium heat.
- Add spinach and garlic and cook, stirring constantly, until spinach wilts, about 2-3 minutes.
- Add mixture to a blender or food processor, pour in ¼ cup hot water and puree. Set aside.
- In large soup pot cook onions in butter until they soften, about 3–4 minutes.
- Sprinkle the flour over onions, stirring to combine and cooking about 2 minutes.
- Pour in milk, stirring occasionally.
- Add salt, cayenne, and some black pepper and stir to combine.
- Cook over medium heat for 5 minutes, stirring constantly.
- Pour in pureed spinach then cook until thickened, about 3–5 minutes.
- Taste for seasoning, adding more salt, pepper, or cayenne if desired.
- Serve warm.
