Ingredients
- 1¼ lbs sweet potatoes, peeled and cubed
- 6 cups water
- ½ cup heavy cream
- 1 large celery stalk, chopped
- 1½ Tbsp butter
- 2 Tbsp lemon juice
- 3 small carrots, peeled and thinly sliced
- 1 bay leaf
- 1 tsp paprika
- 1½ tsp salt
Directions
- Combine all the ingredients in a pot and cook, uncovered, on high for 10 minutes.
- Reduce heat and simmer until the vegetables are soft.
- Remove bay leaf.
- Mash mixture using a potato masher or fork, stir, and serve hot.
