Dumpling soups, such as this wonton soup, have been popular throughout China for centuries. A wonton is a dumpling composed of a thin dough wrapper filled with ground pork or shrimp, spices, and often chopped green onion. The wontons are boiled and served in a clear soup with more green onion. In America, wonton soup is commonly served at Asian restaurants and buffets throughout the country.

Ingredients
- 8 oz shrimp, finely chopped with tails removed
- 4 mushrooms, finely chopped with stems removed
- 8 oz pork, minced
- 1 tsp salt
- 1 Tbsp soy sauce
- 1 tsp sesame oil
- 2 and 4 green onions, finely chopped and divided
- 1 tsp fresh ginger, grated
- 2 Tbsp water chestnuts, finely chopped
- 1 package (8 oz) wonton wrappers
- All-purpose flour, as needed to dust plate
- 5 cups chicken or beef stock
Directions
- Stir together the shrimp, mushrooms, pork, salt, soy sauce, sesame oil, two green onions, ginger, and water chestnuts in a large bowl until well combined.
- Place a 1 teaspoon of the mixture in the center of each wonton wrapper.
- Moisten the edges of a wrapper with water, fold it in half diagonally, pinch edges together to seal, and place it on a plate dusted with flour. Repeat this process until all the wontons are prepared.
- Pour stock into a large pot set over medium heat.
- Bring a saucepan of water to a boil, add a few wontons, and boil for 4–5 minutes. Using a slotted spoon, transfer the boiled wontons to the pot with the stock. Repeat this process with the remaining wontons until all are in the pot.
- Sprinkle the remaining four green onions over the soup and serve hot.
